500ML (16.9 FL OZ) | Cold-Pressed Within 12 Hours | Organic, Rain-Fed Nabali Olives

From the terraced hills of Umm al-Fahm, this exceptional olive oil is harvested from a rare grove of organic Nabali trees, tended by the youngest farmer in our collective. The land — owned and worked by his family for generations — overlooks the wall dividing Palestinians living in the occupied territory from those in the West Bank. Despite this separation, the groves endure, and so does the tradition.

Each olive is handpicked and cold-pressed within 12 hours, preserving the full spectrum of its vibrant, fresh character. Unlike more common commercial cultivars, these Nabali trees are pesticide-free and fully rain-fed, offering an unfiltered expression of the region’s terroir and resilience.

This season’s oil is both bold and balanced, showcasing bright tangy notes that shine across dishes — a true celebration of Palestine’s living landscape, shaped by care, patience, and legacy.

Umm al-Fahm (Arabic: أمّ الفحم), meaning "Mother of Charcoal," is a major Palestinian city in the northern part of historic Palestine, located just northwest of Jenin. Its name recalls the oak forests that once surrounded it, where charcoal was produced for generations. Archaeological evidence shows that the area has been inhabited since the Iron Age, with layers of civilization stretching through the Roman, Islamic, and Ottoman periods. Under Ottoman rule, it was part of the Turabay Emirate and later became a stronghold of local clans such as the Aghbariyya, Mahamid, and Jabarin, who shaped the town into a central node of what came to be known as the "Fahmawi Commonwealth"—a network of Palestinian villages linked by land, kinship, and trade.

Before 1948, Umm al-Fahm was a thriving rural town under the British Mandate, known for its olive groves, animal husbandry, and watermills at nearby Lajjun. The Nakba brought irreversible upheaval: while Umm al-Fahm itself was not depopulated, it absorbed thousands of displaced Palestinians from surrounding villages destroyed or emptied by Zionist militias. In 1949, following the armistice agreements of the Lausanne Conference, Umm al-Fahm was forcibly included within the State of Israel—a decision made without the consultation of its residents. That same year, its leaders were compelled to sign an oath of allegiance.

The town remained under Israeli military rule until 1966, enduring restrictions on movement, land confiscations, and curfews. Even after the military regime ended, the scars of exclusion persisted, and Umm al-Fahm grew into a political and cultural center for Palestinian citizens resisting erasure. After 1967, it became more isolated from its natural hinterlands in the West Bank due to the new borders, yet it remained fiercely rooted in its identity. The city is known today for its political activism, cultural life, and social resilience. It is home to the influential Northern Islamic Movement, as well as to the acclaimed Umm al-Fahm Art Gallery—founded in 1996 as a space for contemporary Palestinian expression.

Despite decades of marginalization and economic challenges—including a 31% poverty rate reported in 2007—Umm al-Fahm has remained an engine of grassroots resilience. Its ancient olive groves, still tended by the descendants of pre-1948 farmers, continue to produce some of the most flavorful and storied olive oil in the region. For the people of Umm al-Fahm, olive cultivation is not only livelihood—it is a political act of endurance, an ancestral duty, and a quiet defiance against the loss of land and memory.

Store in a cool, dry place, shielded from direct sunlight or heat.
