Exclusive: 709 bottles produced
A bold new release. Same uncompromising standard.
Introducing our newest bottle from the 2024 harvest — a rare expression of Nabali olives, grown on the hills of Umm El Fahm, where a young Palestinian farmer cultivates one of the few lands still planted with this ancient variety. His groves overlook the dividing wall between Palestinians living under occupation and those in the West Bank — a landscape of separation, yet resilience.
This oil is bold in bitterness, bright in tang — perfect for salad dressings, drizzling, and finishing dishes that deserve something deeper.

Meet Omar
Omar Tawfiq Jabareen, a 27-year-old farmer, artist, and professional olive oil sommelier from Umm al-Fahm. With a deep love for the land and a keen eye for storytelling, Omar moves seamlessly between tending ancient olive groves and capturing life through his lens.
In recent years, he’s devoted himself to caring for the olive trees planted by his grandfather, some of them over 600 years old with the youngest 60 years old, honoring a legacy that runs deep in the soil. His journey took him all the way to Rome, where he studied at the prestigious Fondazione EVOO SCHOOL and became a certified olive oil sommelier , bringing both science and soul to the craft of olive cultivation.
