This year's harvest marks an exciting evolution in production capability. Thanks to the overwhelming support from our community, expanded staffing both in the groves and production center has allowed for enhanced attention to detail at every step, resulting in both increased yield and elevated quality.

This season's pressing showcases the culmination of expanded resources meeting centuries-old expertise: expect a full-bodied oil that carries the essence of Jerusalem's terroir, where each drop tells the story of land cultivated by the same family for over 500 years.

Ayda Saadah tends her groves in Bido village, just outside Jerusalem. Her work follows the rhythm of the land, pruning, caring, and harvesting when the season allows. Like many farmers in the area, access to the land is not always guaranteed, yet the relationship to these trees continues. For Ayda, olive farming is both a livelihood and a responsibility carried across generations.

The hills around Jerusalem are marked by stone terraces, dry summers, and cool winter rains, conditions that shape the character of the olive trees that grow here. Bido village sits among these hills, where olive cultivation has long been central to daily life.

The Nabali variety thrives in this terrain. Known for its delicate fruitiness and layered profile, it produces oils that are both soft and complex.

The design features a tatreez motif of an olive branch, a very important symbol in Palestinian visual language. Traditionally hand-stitched onto garments, tatreez patterns carry stories of land, place, and identity. Here, the motif is translated onto the bottle, connecting the act of cultivation with the act of making.

This Jerusalem Nabali oil is subtle, layered, and versatile.
