Harvested from Rumi olive trees grown in the groves of Dier Abu Mash'al, a village in the hills northwest of Ramallah, this limited harvest reflects a single season from a single place. Picked by hand and cold-pressed within hours, this extra virgin olive oil preserves the freshness and integrity of the fruit at its peak. The result is a balanced oil with a fresh green aroma, soft bitterness, gentle spice, and a clean, smooth finish.

Nader and Zakher Zahran care for their family's olive groves throughout the year. Their work follows the rhythm of the seasons: pruning, tending, and preparing for harvest long before the olives are picked. When harvest arrives the work becomes intense and focused, and every tree is picked by hand at the right moment.

For the Zahran brothers, olive farming is a continuous practice, one that connects daily care with a single, short harvest window each year.

Dier Abu Mash'al sits in the hills northwest of Ramallah, where olive cultivation has long been part of village life. The terrain is shaped by rocky soil, sloping hills, and dry Mediterranean seasons that influence how the trees grow and how the fruit develops.
