Pan and Pour
1 × 750 ml (25.4 fl oz) + 1 × 500 ml (16.9 fl oz) | Cold-pressed in steel drums
Most kitchens have one olive oil. This is an argument for two: one for the pan, one for the plate.
Shareef Khateeb tends the Koroneiki in the Galilee hills around Mi'ilya, a Greek cultivar in Palestinian soil, bold and structured enough for the cooking. The Zahran brothers farm the Dier Abu Mash'al Rumi near Ramallah, balanced and fresh-green for finishing once the heat is off. Two farmers, two villages, two jobs in one kitchen.
Includes:
– 1 × Mi'ilya Koroneiki Cold Pressed 750 ml (25.4 fl oz) – Bold, structured, and peppery
– 1 × Dier Abu Mash'al Rumi Cold Pressed 500 ml (16.9 fl oz) – Balanced, fresh-green, and softly bitter
Store in a cool, dry place, shielded from direct sunlight or heat.
In Palestinian kitchens, one oil rarely does everything. There is the oil that goes in the pan, and the oil that goes on the plate. This set splits that job between two bottles and two farmers.
Shareef Khateeb's Koroneiki is built for the cooking. It is bold and structured, the kind of oil that carries garlic, onions, and a warm dish without thinning out. The Zahran brothers' Rumi is built for the finish. Balanced, fresh-green, and lightly peppery, it goes on after the heat is off: over the eggs, the soup, the bread, the plate of vegetables on its way to the table.
Keep the big bottle by the stove and the small one by the table. Once you cook with one and finish with the other, going back to a single oil for both feels like asking one bottle to do two jobs.
