The olive tree is at home across the Mediterranean. Farmers in different regions have grown it for thousands of years, developing it into different varieties. Picholine came out of France. Koroneiki came out of Greece. We worked with farmers in both countries to bring those cultivars to Palestinian soil, with respect for where they came from and the hands that grew them first.
Nassar Darawshi grows the Picholine in his Iksal groves near Nazareth. Shareef Khateeb tends the Koroneiki in the hills around Mi'ilya. Two cultivars from elsewhere. Two Palestinian farmers. One Mediterranean tree, shared across borders.

There are dozens of olive cultivars across the Mediterranean. We chose these two because each carries a different tradition.
Picholine is what French growers developed: balanced, herbal, with green-apple brightness. Koroneiki is what Greek growers shaped: bold, structured, intensely peppery. Two ways the same tree can taste depending on whose hands have been working it.
Both now grow in Palestinian soil, beside cultivars that have always been here. Same tree, different histories, the same shelf.
