Galilee to Bethlehem
2 × 500 ml (16.9 fl oz) + 2 × 750 ml (25.4 fl oz) | Cold-pressed in steel drums
Palestine is small enough to drive end to end in a few hours, and the oil changes the whole way down. Four bottles, four villages, north to south.
Shareef Khateeb tends Koroneiki in the Galilee around Mi'ilya. Mohammad Zein Al-Dein presses Rumi in the hills of Jenin. The Zahran brothers farm the new Dier Abu Mash'al Rumi near Ramallah. And in the Bethlehem hills to the south, Beit Jala's Rumi turns smooth and balanced. Four farmers, four villages, the length of the country.

Some bundles are about a kitchen job. This one is about distance. Four oils from four parts of Palestine, far enough apart that no two taste the same.
The Galilee Koroneiki carries weight, the bold one that takes the heat of a pan. Jenin's Rumi runs the other way: bright and green, made for raw bread and salad. The Dier Rumi sits in the middle, balanced and soft, the bottle you reach for without thinking. Beit Jala's Rumi from the south is the smooth, rounded one. Same season, four very different hands.
Taste them side by side and the country shows up in the glass. The land does the talking.
