Ayda Saadah farms Nabali trees in the hills outside Jerusalem. Mohammad Zein Al-Dein farms Rumi trees in the valleys of Jenin. Both pressed within hours of picking. Both from the 2025 harvest. Everything after that diverges.
The Jerusalem is quiet. It lets food speak first and arrives at the end, rounding everything out. The Jenin Early Harvest is the opposite. It announces itself. Peppery, green, full of the energy that comes from picking fruit before it fully ripens. Put them side by side and you understand what olive oil range actually means.
