The Gentle Two
2 x 500 ml (16.9 fl oz) Olive Oils + Zaatar 90 g | Cold-pressed in steel drums
Two oils that don't compete for attention. They ask you to slow down and notice.
The Jerusalem Nabali is soft and fruity with notes of green almond, herbal undertones, and a gentle peppery finish. The Nazareth Suri is fruity and herbaceous with a quiet warmth that builds. Both are subtle. Neither is simple. The differences are in the details, and the details are worth finding.
Um Abedallah's zaatar from Bido sits between them. Try each oil with the same zaatar and notice how the thyme shifts, how the sesame changes weight, how the finish moves in a different direction.
Includes:
1 x Jerusalem Nabali Cold Pressed Delicate 500 ml 16.9 fl oz
1 x Nazareth Early Harvest Suri Cold Pressed Rich 500 ml 16.9 fl oz
1 x Palestinian Zaatar Mixture 90 ml 3 oz
Store in a cool, dry place, shielded from direct sunlight or heat.
Both of these oils sit on the quieter end of the spectrum. Neither will overwhelm a dish or dominate a plate. But they are not the same oil.
The Jerusalem Nabali comes from Ayda Saadah’s grove in Bido, where the hills are dry and the stone holds the heat. It gives you almond, soft fruit, and a finish that fades gently. The Nazareth Suri comes from Nassar Darawshi’s groves in the Galilee, pressed early when the fruit is still green and full of life. It gives you herbs, bright fruit, and a pepper that lingers longer than you expect.
The people who love these oils are the same people who notice when something changes. This bundle is for them.
