Shareef Khateeb grows Koroneiki in the hills around Mi'ilya. His single-estate oil is never blended, cold-pressed within hours of picking, and clean and peppery at the finish. Pour it over warm grains and the last step earns its place.
The freekeh comes from a women's cooperative in Bazariya, where green wheat is roasted over open fire. The mujadara mix is made by hand by a cooperative in Jenin: lentils and bulgur, ready for the pot. Two Palestinian dishes, with one bottle to cook them and finish them.

Freekeh keeps the smoke of the fire. Mujadara brings lentils, bulgur, and the onions you cook slowly at home. Both welcome an oil with a little bite.
Shareef Khateeb's Koroneiki comes from Mi'ilya. A Greek cultivar grown in Palestinian soil, it has green, herbaceous notes and a lingering peppery finish. The freekeh is roasted by a women's cooperative in Bazariya. The mujadara mix is made by a cooperative in Jenin. Every part comes from people working their own corner of Palestine.

Mujadara: cook a sliced onion in Koroneiki oil until deep gold. Add the mix, water, and salt. Cover and cook over low heat for about 30 minutes. Follow the pack for water quantities.
Freekeh: toast it in Koroneiki oil for a minute. Add water and salt, cover, and cook over low heat for 20 to 25 minutes. Follow the pack for water quantities, then rest and fluff.
Pour a little fresh Koroneiki over each finished plate. Both grain packs contain wheat.
