Shireen Najjar, the sole female farmer in our collective, grows Nabali in the hills of Burin: her early harvest oil is bold, spicy, and full of green intensity. Nassar Darawshi works Picual groves near Nazareth in the Lower Galilee; a Spanish-origin variety that thrives in Palestinian soil, producing a bright, aromatic oil with a tangy finish.
