Rumi is one of Palestine's oldest native cultivars. But Rumi from Burqa and Rumi from Anza are not the same oil. The village, the soil, the altitude, the harvest timing — all of it shapes what ends up in the bottle.
The Burqa Rumi comes from Sameer and his family, who farm mature trees rooted in highland limestone. Their oil is herbaceous, layered with green almond and wild herbs, finishing with a steady peppery warmth. The Anza Rumi is produced by the Anza Agricultural Cooperative: dozens of families farming together on organic, rain-fed land near Jenin. Their early harvest oil is thick, earthy, and spicy, built for cooking as much as finishing.
