This pair is that table's foundation. The Freekeh is green wheat, fire-roasted in small batches by a women's cooperative in Bazariya: smoky, nutty, chewy, with enough depth to carry a whole plate. The Beit Jala Rumi is Basheer Al-Sous's oil, from trees his family has kept for four generations in the hills above Bethlehem: buttery, harmonious, and softly tangy, the kind of oil that makes vegetables taste deliberate.

The freekeh brings the character. Fire-roasting leaves smoke in the grain, so a pot of it tastes like something happened. The Beit Jala Rumi brings the richness. Basheer Al-Sous farms his family's trees above Bethlehem, and his oil is soft and full enough to finish a plate on its own.

1. Toast the freekeh in Beit Jala oil for a minute.
2. Add water and salt. Lid on, low heat, 20 to 25 minutes.
3. Rest five minutes, fluff, and finish with another pour. Roasted vegetables on top make it dinner.
