The Shelf
3 × 500 ml (16.9 fl oz) | Cold-pressed in steel drums
Good olive oil gets rationed. The beautiful bottle sits half-full for months, saved for guests and finishing, while something industrial does the actual cooking. Everyone does it. It defeats the whole point.
The Shelf exists to end the rationing. Three full bottles of the everyday range: the Nabali that starts the pot, the Beit Jala that softens the plate, the Kalamata that finishes it. A liter and a half standing behind whatever is open, so the good oil stops being an occasion and becomes how your kitchen cooks.
Two of the three are Nassar Darawshi's, pressed in Nazareth: the grassy, balanced, deeply fragrant Nabali, and the sweet, smooth, quietly rich Kalamata. Between them, Basheer Al-Sous's Beit Jala Rumi, buttery, harmonious, and softly tangy, from trees his family has kept for four generations above Bethlehem.
Includes:
– 1 × Nazareth Nabali Full Body, 500 ml (16.9 fl oz). Grassy, balanced, deeply fragrant.
– 1 × Beit Jala Rumi Cold Pressed, 500 ml (16.9 fl oz). Buttery, harmonious, softly tangy.
– 1 × Nazareth Kalamata Cold Pressed, 500 ml (16.9 fl oz). Sweet, smooth, quietly rich.
Store in a cool, dry place, shielded from direct sunlight or heat.
These are not our rarest bottles. That is the point. They are the three that can take over a kitchen: one for heat, one for softness, one for the last pour, each deep enough to be poured daily and none too precious for a Tuesday.
The Nabali does the cooking. The Beit Jala does the softening. The Kalamata does the finishing. None of them needs protecting from the other two.
Buy one bottle and you taste Palestine. Stock the shelf and you cook with it.
The person done rationing the good bottle.
Making the switch: this replaces the supermarket oil, not the special one.
Households that cook daily and actually empty bottles.
