The Anza Early Harvest is pressed by the Anza Cooperative from early-harvest Rumi olives near Jenin: bold, peppery, structured. The Coratina, also from Nassar, is the high-polyphenol Italian cultivar: bitter, intense, and hot at the throat. Three cultivars, three steps up the pungency scale.
