Harvested from Picholine olive trees grown in the groves around Nazareth, this limited harvest reflects the character of a French cultivar that has settled into Galilee soil over the past few seasons. Picked by hand and cold-pressed within hours, this extra virgin olive oil preserves the freshness and integrity of the fruit at its peak. The result is a bright, lively oil with a soft floral aroma, notes of fresh herbs and green apple, balanced bitterness, and a smooth peppery finish.

His work celebrates the depth of Palestinian terroir and the art of thoughtful cultivation, producing oils that speak of both heritage and innovation.

Nestled near Nazareth in the Lower Galilee, Iksal lies between rolling green hills that have nurtured olive trees since ancient times. Archaeological traces from the Roman and Byzantine periods reveal the village’s long connection to agriculture and oil pressing. Families here continue the rhythm of harvests that began millennia ago — collecting olives by hand and pressing them within hours to preserve their bright, living character.
The air in Iksal still fills with the scent of new oil each autumn, a reminder of how deeply olives shape the land and community.

The Picholine bottle features a hand-drawn portrait of Khalil Abu Osba, a Palestinian resistance fighter. Through this artwork, I wanted to honor the memory of those who fought for this land and the generations who continue to live on it.
Pairing suggestions: Fresh salads, soft cheeses and labneh, grilled fish, roasted vegetables, simple egg dishes, and warm bread with herbs.
Serving suggestion: Drizzle over fresh, simple dishes just before serving. Picholine's brightness comes through clearest when it's the last thing on the plate, not the first.
