Palestinian olive oil is often treated as one thing. It's not. The variety, the village, the soil, the harvest timing; all of it shapes the final oil.

Rumi is one of Palestine's oldest native cultivars. It grows deep in the hills of Burqa, producing an oil that's structured, herbaceous, and balanced with a steady peppery warmth. Coratina is Italian by origin but thrives in the fields around Nazareth, where it produces an oil that's raw, earthy, and intensely bitter: a completely different expression from the same land.

Sameer and his family farm Rumi groves in Burqa, northwest of Nablus. Nassar Darawshi leads one of Nazareth's most respected olive oil operations from the village of Iksal in the Lower Galilee. Both work by hand, both press shortly after harvest, and both let the oil speak for itself. Two farmers, two traditions, one land that shapes them both.
