The Kalamata is where heat meets sweetness. Nassar Darawshi presses it from one of the rarest varieties in his Nazareth groves, and it performs best when it's working: in the pan, over roasting trays, absorbed into warm food. The Anza comes from organic cooperative land near Jenin, pressed early when the fruit is still green and full of fight. It brings body and spice to anything that needs weight. The Coratina is Italian by origin, Palestinian by soil, and completely uncompromising. High in polyphenols, deeply bitter, built for finishing or for those who drink their oil straight.
