First Taste
1 × 750 ml + 2 × 500 ml (1.75 L total) | Cold-pressed in steel drums
New to Palestinian olive oil? Start here. Three bottles, three villages, picked because they are the easiest way in: approachable, distinct, and made to be tasted side by side.
Open Jenin first, the everyday oil of the northern valleys, smooth and green with a gentle bitterness, the one you will reach for most nights. Then Nazareth's Nabali, from Nassar Darawshi's Galilee groves, grassier and more fragrant, with a little more to say. And Jerusalem's Nabali, delicate and soft off the stone terraces around Bido, with green almond and a quiet peppery finish.
Three oils, three corners of the country, one easy introduction. Taste them next to each other and you will have a favorite by the weekend, and a feel for how much range a single country can hold. The rest of Palestine is still out there when you are ready for it.

You don't need to know anything about olive oil to start with these. That's the point of the three.
They share an easy, unfussy character: nothing too bitter, nothing too bold, the kind of oil you pour without thinking. But they are far from the same. Jenin is smooth and green, an everyday workhorse. Nazareth's Nabali is grassier and more aromatic, a step up in character. Jerusalem's is the most delicate of the three, soft and almondy off the southern terraces.
Together they do one job well: they show you what Palestinian olive oil actually is, three real villages and three real farmers, without asking you to commit to a whole shelf. Find the one you love, then go further.
Your first three Palestinian olive oils, chosen to make it easy.
