Ayda Saadah's, from Biddu northwest of Jerusalem, is soft and green, with green almond and wild herbs. Nassar Darawshi's, from Iksal near Nazareth, is round and buttery, grassy, with a clean finish. Then Dier Abu Mash'al, from the Zahran brothers' Rumi trees: rich and fruity, with a soft pepper at the end. Pour the three side by side, mildest to boldest, and taste what a village and a variety do to an oil.
