The Jenin Early Harvest Rumi is its bolder counterpart, pressed weeks earlier from the same groves for a deeper, more peppery oil. The Anza Early Harvest brings thickness, earth, and spice from organic cooperative land near Jenin. The Nazareth Suri is fruity and herbaceous, with a peppery finish that lifts everything it touches. The Nazareth Kalamata is rare, sweet, and smooth. Most people have never tasted it. The Nazareth Coratina is the most intense oil in the collection. Raw, bitter, and built for those who want their olive oil uncompromising.
Um Abedallah's zaatar from Biddu rounds it out. Because no matter how many bottles are on the shelf, the morning still starts the same way.

A shelf like this doesn't happen by accident. Each bottle is here because it does something the others don't.
The two Jenin oils show what the same Rumi groves produce at different harvest moments. Mohammad Zein Al-Dein farms both, and tasting them side by side is the clearest lesson in what timing does to oil. The Anza comes from a cooperative harvest on organic rain-fed land. It's thicker, spicier, and works differently in the kitchen than anything from Jenin. The three Nazareth oils are all from Nassar Darawshi's groves near Iksal, but each variety pulls in its own direction. The Suri is herbaceous and bright. The Kalamata is sweet and rare. The Coratina is bitter, intense, and high in polyphenols. Three bottles from one farmer that taste like three different philosophies of olive oil.
The zaatar is the thread that runs through all of it. No matter which oil you reach for, it knows what to do with it.
