Oil and zaatar from the same hills. The Jerusalem Nabali is soft, fruity, and layered with notes of green almond. Um Abedallah's zaatar from Bido carries wild thyme, sesame, sumac, and sea salt. Mixed in a small bowl, poured, torn through with bread. This is breakfast in Jerusalem before the day begins.

The oil comes from Ayda Saadah’s grove in Bido village. The zaatar is blended by Um Abedallah in the same village. They share the same hills, the same air, the same soil. This isn’t a pairing anyone had to design. It already existed on the land long before it was put in a box.
In Bido, zaatar and olive oil meet every morning. The oil is poured first, then the zaatar is pressed into it by hand. Bread does the rest. There is nothing to measure, nothing to think about. The two belong together the way they always have.
