End in Bazariya, where Abed Al-Rahman Oudi still presses with ancient millstones — his tangy, greeny oil drizzled over a plate of maqluba is the finish the dish was always waiting for.

These three villages sit within miles of each other in the hills around Nablus, but each one produces something different. The soil shifts. The trees change. The pressing method matters. Arraba's fertile plains give its Rumi a rounded fruitiness you won't find in Bazariya's highland-grown Rumi, which runs greener and tangier — partly the terroir, partly the ancient millstones that Abed Al-Rahman still uses. Mustafa's Nabali from Sarra sits between them — bright and peppery, the oil you reach for first and most often. Together, they're a walk through the Nablus region in three bottles. Each one earns a different spot in your kitchen and a different plate on your table.
