Farming Method: Organic practices, traditional methods, rain-fed, hand-picked.
High above Bethlehem and just south of Jerusalem, Beit Jala sits at ~825 meters, where cool evenings and limestone hills favor slow-ripening olives. The town’s churches, stone lanes, and terraced groves tell a long story: vineyards and olive presses alongside family kitchens and festive tables. Rumi trees here carry deep roots, and their fruit gives a rounded, food-loving oil that locals pour over salads, breads, and warm dishes as a final touch.

The Beit Jala label features an embroidered tatreez olive branch — a nod to Palestinian needlework that carries family stories stitch by stitch. The branch symbolizes peace, belonging, and care, connecting the artistry of women’s hands to the farmers who tend ancient trees.
