In a Palestinian home, the olive oil stays out on the table, from breakfast through the rest of the day. A household keeps the oil of one village, a taste it knows by heart. That is the idea behind our house oil: one oil to keep within reach and cook with every day.
Our house oil is Koroneiki from Shareef Khateeb's groves in the hills around Mi'ilya. It is the oil we suggest for everyday cooking, because it holds up to heat and its pepper stays in the dish. The olives are picked by hand and cold-pressed within hours, and Shareef's name and village are printed on every bottle. It tastes green and peppery, with a grassy bite and a clean finish that lingers.
Keep the open bottle where you cook and pour from it every day. Before long, it is the taste your kitchen knows by heart.

A house oil gets used every day, so it makes sense to keep more than one bottle. Laying in a real supply is how oil is kept in Palestine, and these three are a small version of it. All three hold the same single-estate oil from Shareef's October 2025 harvest, never blended, so when one bottle runs out the next one tastes the same.
Bought together, the three cost less than three single bottles. We priced them that way because a house oil is meant to be poured freely, every day.
Weeknight cooking: it holds up to heat, so start the pan with it, or toss potatoes and vegetables in it before roasting.
Pouring it raw over food that can hold its pepper and bitterness, such as bitter greens or warm bread with labneh.
Kitchens that cook most days: open one bottle at a time and keep the other two sealed, somewhere cool and dark.
Giving one of the three to someone who cooks: the label names Shareef and Mi'ilya, so they know whose oil it is.
