Every Palestinian kitchen runs on a few things kept always in reach. Not the oil, that comes on its own. These are the rest: the za'atar for the morning, the sumac for everything after, and the two grains that turn a bare shelf into dinner.
The za'atar is Um Abedallah's, blended by hand in Biddu from wild hillside leaves, sesame, sumac, and salt. The sumac comes from the hills near Jerusalem, dried and ground the old way, tart and a little smoky. The freekeh is young wheat, fire-roasted in small batches by a women's cooperative in Bazariya, smoky and nutty and chewy. And the mujadara, lentils and bulgur from a cooperative in Jenin, the honest one-pot meal Palestinian homes have cooked for eight centuries.
Four things, four sets of hands, all women-led. Add an onion, some oil, a hot pan, and you are not cooking Palestinian food from a recipe. You are cooking it the way it is actually cooked: from the pantry, without thinking, every day.
Includes:
– 1 × Palestinian Za'atar Mixture, 90 ml (3 oz). Wild thyme, sesame, sumac, salt.
– 1 × Palestinian Sumac, 90 ml (3 oz). Tart, ground, a little smoky.
– 1 × Palestinian Freekeh, 500 g (17.6 oz). Fire-roasted green wheat, smoky and nutty.
– 1 × Palestinian Mujadara Mix, 500 g (17.6 oz). Lentils and bulgur, the one-pot meal.
Store in a cool, dry place, shielded from direct sunlight or heat.
Teta means grandmother. Every Palestinian one keeps a pantry like this: not fancy, not planned, just the handful of things she reaches for without looking, because the meals depend on them.
That is what these four are. Za'atar and sumac season almost everything. Freekeh and mujadara are the meals a Palestinian home makes from almost nothing, and the ones everyone asks for anyway. None of it needs a recipe card. It needs a hot pan, an onion, and a pour of oil.
