Freekeh is green wheat, harvested weeks before it ripens and roasted over open fire until the chaff burns off and the smoke settles in. Palestinian farmers have kept it this way for centuries: the fire was how you saved a young harvest, and the flavor is why nobody stopped.

Ours is made by a women's cooperative in Bazariya, roasted over open fire in small batches, by hand from start to finish.

Best uses: Pilaf under roasted chicken, freekeh with yogurt and charred lemon, tomato and mint salads, soups

Store in a cool, dry place, shielded from direct sunlight or heat.

1. Rinse the freekeh.

2. Toast it in olive oil for a minute, then add water and salt. Lid on, low heat, 20 to 25 minutes.

3. Rest five minutes, fluff, and finish with a pour of olive oil.
