The first oil of the season is the boldest. The olives are picked green, before they ripen, and these three were pressed between September 26 and 29, before any of our other oils. Nassar Darawshi left a job in high-tech to farm in Iksal, near Nazareth, and presses two of them with his brother: the Early Suri and the Coratina Early Harvest. Mohammad Zein Al-Dein's family presses the third, the Early Jenin, in Al-Yamun. Take them slowly: a spoonful each, or raw over warm food.

My 'cooking' has been limited to making vegetable/bean salads. This oil adds sparkle and zest to garbanzo bean salads and all green veggies. I enjoy the peppery taste it adds to cold foods. Very happy with this oil!
