Our first collaboration with Jalal, whose family has tended this land in Marda for over 100 years. This Nabali olive oil is produced entirely by family hands, with each tree cared for personally throughout the year. The 2025 harvest yielded a small quantity; just 972 bottles, bottled with acidity ranging between 0.18%–0.28%, reflecting a true expression of Palestinian-made olive oil.

Aroma: Olive
Palate: Round and smooth
Finish: Bitter
Best Uses: Salads, finishes, roasting, bread dipping

Store in a cool, dry place, shielded from direct sunlight or heat.

Together with his sons, brothers, and their families, Jalal works the land year-round; tending the trees, harvesting by hand, and carrying forward a shared family responsibility. Beyond farming, Jalal is the imam of the mosque in Marda village. For him, caring for the olive trees is an extension of his faith; a way of honoring the land and what God has placed within it.

Marda is a historic Palestinian village in the hills of the northern West Bank, long known for its agricultural life, religious learning, and olive cultivation. Home to just over 2,000 people today, it lies just north of Salfit and has served for centuries as an important rural and spiritual center, producing scholars, farmers, and judges whose influence reached well beyond the village itself. Olive trees have always been central to Marda’s economy, shaping both the landscape and the rhythms of daily life.

The village carries deep historical roots, documented across Mamluk, Ottoman, British, and Jordanian rule. Once a thriving market town surrounded by open grazing land and olive groves, Marda has faced significant land loss since 1967, with much of its agricultural land confiscated or restricted. These changes reshaped village life, limiting access to fields and placing heavy pressure on farming traditions.

Despite these challenges, Marda’s families continue to care for their olive trees year after year, maintaining a connection to the land through cultivation and harvest. These groves, rooted in limestone hills and worked by the same families for generations, produce oils with a smooth body and a distinctive bitter finish. Your Marda bottle represents not just a place, but a village whose relationship with the olive tree endures through history, faith, and quiet resilience.

Concept: The label features a key, referencing the right of return and the deep connection between people and land. The design is inspired by archival photographs of Palestinians holding the keys to their homes; images passed down across generations; as well as the visual language of historic PLO posters.

Pairing suggestions: Palestinian za’atar with fresh bread, roasted vegetables, hearty salads, and simple lentil or bean dishes.

Serving suggestion: Take a small daily shot as a natural tonic, or drizzle generously over warm dishes to highlight its bitterness and smooth, olive-forward character.

  1. Rich in Antioxidants: Extra virgin olive oil is loaded with antioxidants, such as vitamin E and polyphenols, which help combat oxidative stress and protect cells from damage.
  2. Heart Health: The monounsaturated fats in olive oil are known to support heart health by reducing bad cholesterol levels and lowering the risk of heart disease.
  3. Anti-Inflammatory Properties: The anti-inflammatory compounds in olive oil can help alleviate inflammation throughout the body, potentially reducing the risk of chronic diseases.
  4. Vitamin Boost: Besides vitamin E, olive oil also contains vitamin K, which is crucial for blood clotting and bone health.
  5. Digestive Health: Olive oil can aid digestion by promoting the production of digestive enzymes and helping to regulate bowel movements, contributing to a healthy digestive system.
