Meet Shireen Najjar, our collective's sole female farmer and a true pioneer in Palestinian olive oil production. From her groves in Burin, Shireen and her husband are on an unwavering mission to craft the finest olive oil.
With her husband's expertise as a quality assurance manager in the industry, the Najjars oversee their entire production process, from tree to bottle. Shireen's unique approach shines through in her vivid, culinary-inspired descriptions of olive varieties, each one conjuring a specific Palestinian dish.

Burin is a historic Palestinian village in the hills of Nablus, known for centuries of olive growing and agricultural life. Home to just under 3,000 people today, it sits southwest of Nablus and has been an important farming community since at least the 12th century, when its families supplied tithes and cultivated olives that sustained local trade.
The village carries deep historical roots — its families trace their lineage back to notable scholars, judges, and farmers, and its groves have been documented across Ottoman, British, and Jordanian rule. Olive trees have always been the backbone of Burin’s economy, shaping the land, the culture, and the identity of the village.
Despite decades of land loss and repeated settler attacks targeting its olive groves, the people of Burin continue to harvest their trees every year with the same determination and pride passed down through generations. These olives grow on ancient terraces facing the Nablus mountains, producing an oil known for its bold aroma, powerful green notes, and unmistakable Nablus depth.

Concept: The Burin bottle features a hand-drawn illustration of an old stone house, an exact replica of one that still stands in the village. Burin is known for its centuries-old homes, built from the very earth they rest on. Through this artwork, I wanted to honor the beauty of these enduring structures and the life they’ve sheltered for generations.
Pairing suggestions: Palestinian zaatar and fresh bread, roasted vegetables, hearty salads, and simple lentil or bean dishes.
Serving suggestion: Take a small shot each morning as a natural tonic, or drizzle generously over warm dishes to showcase its herbal, spicy, peppery notes.
