Zaatar is rarely eaten without olive oil. Sumac is rarely used without both. In Palestinian kitchens, olive oil coats the bread, zaatar is mixed into it by hand, and sumac is added where brightness is needed. Each ingredient plays a role, but the flavor comes from their combination.
