Before you buy
Five things to know before you buy our olive oil
This is olive oil from single farms in Palestine, pressed this past October, with the farmer's name printed on every bottle. If you got here from one of our videos, you probably have questions. These are the five we hear most, answered in the order people ask them.

- 1Who grows it?
- 2Why does it cost more?
- 3How fresh is it?
- 4Which bottle should I start with?
- 5How does shipping work, and what if I don't like it?
Every bottle names its farmer.
Turn any of our bottles around. On the back you will find the farmer's name and the month the olives came off the trees. The village is on the front. The bottle in the photo is the Mi'ilya Koroneiki, one of the three we recommend at the end of this page, and every farmer in this harvest is listed by name on our farmers page.
Olive Odyssey is Palestinian owned. The farmers we work with grow on their own land, and we pay them above the industry rate for their oil. 10% of our profits go back to Palestinian and Indigenous communities.
What you are paying for.
Where the money goes
Olives picked green give less oil than olives left to ripen. A family grove only produces so much. The farmer is paid properly for all of it. The Full Rotation is our starter bundle: the same three bottles for $119.92, which comes to $39.97 a bottle and $66.00 less than buying them one at a time. It is the same oil from the same farmers; it costs less per bottle because you are taking all three at once.
Picked in October 2025, and the date is printed on the bottle.
Olive oil is pressed fruit, and it is at its best while it is young. Ours is picked green and early, then cold-pressed in steel drums within hours of picking. The month it came off the trees is printed on the back of every bottle, so you can check the date yourself.
What single farm means on our labels.
Every bottle holds one family's olives, from one village, from one season, so it tastes like the place it grew. A bottle from Nazareth does not taste like a bottle from Mi'ilya. Two of the three below are cultivars that arrived from elsewhere and settled in: Koroneiki is Greek, Picholine is French, and both have been growing in Galilee soil for a few seasons now.
If this is your first order, these are the three we recommend.
Use the Koroneiki for cooking, the Picholine on salads, and the Kalamata to finish a dish.
Together they are the Full Rotation, our starter bundle, at the bottom of this page.
