About this spice
Our sumac is one ingredient: sumac, dried and ground into a deep red, tart powder. A Bedouin village cooperative makes it for us.
Scatter it over a salad of tomato, cucumber and onion. Rub it on chicken before it goes on the grill. Dust it over hummus or eggs with a pour of olive oil.
