About this oil

If you like your olive oil soft rather than sharp, start here. Ayda Saadah grows this Nabali in Biddu, a village in the stone-terraced hills northwest of Jerusalem, where dry summers and cool winter rains shape a gentle, layered fruit. It smells green, tastes of green almond and wild herbs, and leaves only a light warmth behind. She also makes our za'atar, so the two belong in the same bowl.

Ayda Saadah

Farmer and herbalist in Biddu, and the woman behind our za'atar.

We pay every farmer 25 to 30% above the market price.

Ayda Saadah introduces herself as two things: a farmer and an herbalist. In Biddu, northwest of Jerusalem, she grows olives, fruit trees and baladi za'atar, and she runs the village's herb shop, the first it ever had. That shop is where we met her, beside five big sacks of za'atar, and she has made ours since early 2023. As a girl she went up into the hills with her mother to gather it wild. "The land is love. The land is giving," she says. "However much you give it, it gives back many times over." Pour her oil over her za'atar, and breakfast comes from one woman's hands.

★★★★★Smooth and Silky

Very smooth, flavorful, silky. Although it can be used as an everyday olive oil, I especially like it for dipping bread with or without za'atar

★★★★★One of the best Olive Oils I have tried

It has that perfect peppery hit to the back of your throat which is a sign of authentic cold pressed olive oils. Great for my early morning shot of olive oil. I also use it on salads and as a dipping oil for bread.

★★★★★Best olive oil ever!

You can tell it’s made with love! Can not be compared to other olive oils. Deep, rich flavors whether cooking, roasting or dipping! Once I discovered Odyssey Oil, I will not buy others. And the bonus is supporting Palestinian farmers & communities…

★★★★★Beautiful and fresh

I was so excited to get my bottles of this beautiful oil. It's surprisingly delicate. At first taste it seems strong but not so. it's lovely to dip, wonderful on cucumbers and tomatoes without overwhelming. AND it's so affordable it's my new everyday olive oil.

★★★★★The most amazing Olive Oil, so honored to be able to enjoy this with my family!

I just received my Jerusalem Olive Oil. The tastes is outstanding. Smooth, fruity and so tasty. I think it tastes even better knowing the effort these farmers go through to cultivate, produce and sell this special product. I am honored to be able to enjoy it with my family!

★★★★★

This Jerusalem Olive Oil🫒 is the best; it is fruity, spicy, and it goes with everything. I haven’t tasted olive oil this good in a very long time.
