About this oil
This Suri was one of the first two oils we pressed this season, in the last week of September. Nassar Darawshi picks it while the olives are still green, and you can taste the timing: a fruity aroma, a rich, herbal palate and a peppery finish. Pour it raw over tomatoes, hummus or labneh, or start the morning with a small spoonful.

Nassar Darawshi
Left an office job in high-tech to farm a grove where many olive varieties grow side by side.
We pay every farmer 25 to 30% above the market price.
Nassar Darawshi used to work in high-tech. Now he farms in Iksal, a village near Nazareth, and runs the family press with his brother. "If I didn't love olives, the land, the oil and the press," he says, "I wouldn't have left my office job." His grove is unusual: Suri, Nabali, Picual, Manzanillo and more grow side by side in one plot, trees of every age and size. That is how he can press oils that each taste like their own variety. He reads a tree by its trunk and its leaves, and when we first asked him for an early harvest, he started pressing three weeks ahead of his season.
