About this oil
This is the bottle for people who like their olive oil to talk back. Coratina is an Italian variety, and picked early in Nassar Darawshi's grove near Nazareth, it pours earthy and raw, with a deep, pleasant bitterness and a spicy finish. Many of our customers take a small sip of it each day. Everyone else drizzles it raw over salads, hummus and warm vegetables.

Nassar Darawshi
Left an office job in high-tech to farm a grove where many olive varieties grow side by side.
We pay every farmer 25 to 30% above the market price.
Nassar Darawshi used to work in high-tech. Now he farms in Iksal, a village near Nazareth, and runs the family press with his brother. "If I didn't love olives, the land, the oil and the press," he says, "I wouldn't have left my office job." His grove is unusual: Suri, Nabali, Picual, Manzanillo and more grow side by side in one plot, trees of every age and size. That is how he can press oils that each taste like their own variety. He reads a tree by its trunk and its leaves, and when we first asked him for an early harvest, he started pressing three weeks ahead of his season.
