About this spice
Ayda Saadah makes our za'atar in Biddu, in the hills northwest of Jerusalem, where she grows olives, fruit trees and baladi za'atar. The leaves are picked by hand, air-dried and stripped from the stem, then mixed with sesame, sumac and sea salt. Nothing else goes in.
Tear warm bread, dip it in olive oil, then in the za'atar. Her Jerusalem oil is the one I'd pour beside it.
