The ancient olive trees, spanning 200 to 500 years, stand as a testament to the enduring legacy of the land. Meet Shireen Najjar, our collective's sole female farmer and a true pioneer in Palestinian olive oil production. From her groves in Burin, Shireen and her husband are on an unwavering mission to craft the finest olive oil.

With her husband's expertise as a quality assurance manager in the industry, the Najjars oversee their entire production process, from tree to bottle. Shireen's unique approach shines through in her vivid, culinary-inspired descriptions of olive varieties, each one conjuring a specific Palestinian dish.
