Before every harvest, that question moves through Palestinian kitchens. Families don’t buy the year’s oil off a shelf; they source it from a farmer they know. Joining the list puts you inside that ritual: your farmer, your village, your batch, named before the oil is pressed.
When our farmers know how many kitchens they are pressing for, they pick to a plan: fair prices agreed before the season, and a harvest picked to real demand instead of guesswork. Signing up is the first act of the harvest.

While you wait for the harvest, here is the method behind it. It has not changed since we started.
Each farmer’s price is set before a single olive is picked: 25–30% above market.
Every bottle comes from a single grove in a single village, and carries its farmer’s name.
Olives go from the tree to the press the same day they are picked. That is what keeps the oil green and alive.
A batch is pressed once. When it is gone, there is no more until the next harvest.
This is the method behind every bottle we have ever shipped, including every bottle on our shelves today.
