The Full Morning Table
2 x 500 ml (16.9 fl oz) + 1 x 750 ml (25.4 fl oz) Olive Oils + Zaatar 90 g | Cold-pressed in steel drums
The Morning Dip is one oil and zaatar. That's the minimum. This is what happens when the table fills up. When there's time, when there are people, when morning is the meal and not just something before it.
Three oils, each with a different job. The Jenin Rumi is bright and clean. It goes into the zaatar bowl first, poured before anyone sits down. The Nazareth Suri is fruity and herbaceous with a peppery finish. It gets spooned over eggs, drizzled onto labneh, or taken as a sip on its own. The Anza is thick, earthy, and spicy. The bold one you tear bread through when the conversation slows down and nobody's leaving yet.
Um Abedallah's zaatar from Biddu ties it all together. Wild thyme, sesame, sumac, sea salt. The thing every hand reaches for.

In most Palestinian homes, there is one olive oil on the table in the morning. But when the morning stretches, when family is visiting, when it's a Friday, when there's nowhere to be, more comes out. Different oils for different things. One for the zaatar. One for the plate. One for the bread basket.
The Jenin Rumi carries the zaatar without competing with it. The Suri from Nazareth brings something different: a fruity, herbaceous quality that lifts lighter foods and holds its own when drizzled over warm dishes. The Anza is the one with weight. Earthy and spicy, pressed early from organic groves near Jenin, it's the oil that fills the silence between bites.
Three villages. Three hands. One morning that doesn't need to end.
